Rich and Creamy Alfredo

rich and creamy alfredoRich and creamy alfredo is my family’s favorite recipe. When they smell this sauce cooking they know they are in for a treat. Its absolutely delicious and definitely a comfort food that warms you from the belly up! So when your having a sad day or just feel like lounging in your pajamas watching a movie then cook up this recipe in thirty minutes and your day is complete!

Whenever I feel like treating myself to alfredo at a restaurant, I am almost always disappointed. The sauce is thin and tastes just like cream. No flavor. No comfort. My family knows that best alfredo is momma’s alfredo.

Here are a few tips:

  • Always smash garlic, never chop
  • Always use Parmigiano Reggiano Cheese, never use imitation or the fake stuff! Its also important to purchase the wedge and not shredded cheese as it will be dried out. This makes a huge difference.
  • I like to add one chicken Maggi cube. For the health freaks out there, its not going to kill you. I use the less sodium but of course if this bothers you then don’t use it!
  • Again as I mentioned before, a few tablespoons of butter goes a long way.

Ingredients
  • ¼ stick of butter
  • 1 medium onion
  • 1 chicken maggi cube (low sodium)
  • 1 pack mushrooms
  • 2 cups cooking cream or whipping cream
  • 2-3 tablespoons of milk
  • ¾ cup shredded parmigiano reggiano cheese
  • ½ tsp salt or more to taste
  • ½ tsp ground black pepper
  • 2-3 tablespoons of lemon juice
  • Pasta of your choice
Instructions
  1. Finely chop onion
  2. In a saute pan on medium heat, melt butter. Add the onions
  3. Cook onions until soft and translucent about 3 minutes
  4. Slice mushrooms, add to the pan, and cook for another 3 minutes
  5. Add cream, shredded cheese, chicken maggi cube, salt and pepper
  6. Cook on low heat until sauce thickens for about 20 minutes
  7. Add a few tablespoons of milk to thin the sauce if it gets too thick
  8. Once sauce has thickened and is done set aside
  9. Add lemon juice
  10. In a large stock pot boil 2 liters of salted water
  11. Cook pasta of your choice until al dente (slightly has a bite) and add to the alfredo sauce
