Shakshuka: Eggs cooked over tomato sauce

Serves: 4
  • 2 tbs olive oil
  • 1 small onion
  • 1 red bell pepper
  • 2 cloves garlic
  • 2 medium tomatos
  • 1 cup water
  • 1 tbs tomato paste
  • ½ tsp oregano
  • ½ tsp cumin
  • ½ tsp coriander
  • ½ tsp salt and pepper
  • 4 eggs
  1. Finely chop the onion and bell pepper.
  2. In a heated skillet add 2 tbs olive oil
  3. sauté the onion until translucent (about 4 minutes)
  4. Add the bell pepper and cook for 2-3 minutes
  5. chop the tomatoes and add to the skillet with 1 cup of water, 1 tbs of tomato paste, smashed garlic and spices
  6. cover with a lid and simmer for 20 minutes until sauce thickens on low heat
  7. Crack and softly lay each egg in one corner of the skillet
  8. Cover with a lid and allow the eggs to steam cook to your preference. Its optimal to have the yolks a little runny. Enjoy with hot bread!
