Spinach and rice

spinach and riceMy mother’s spinach and rice is so delicious and so easy to make. If you need to have a dinner made in thirty minutes, then this is the recipe for you. Not only is it easy but incredibly healthy. She serves the spinach over a bed of hot vermicelli rice and its a dream! I absolutely love this rice recipe.


There really isn’t anything special about the rice except that its cooked in butter until the vermicelli noodles are crispy. She would brown the butter and we could smell it from anywhere in the house. Its such a comforting smell. After the noodles are browned and crispy, she would then add the rice and cook it in the brown butter for a couple minutes before adding the water and letting it steam cook. I used to love to take a large bowl of this hot rice and pour cold laban (yogurt) over it with a sprinkle of sea salt. Oh my God! Such a comfort food for me!

Serves: 4
  • 300 grams spinach
  • 1 medium onion
  • 5 cloves garlic
  • juice from 1 lemon
  • 1 tsp salt or more to taste
  • pepper to taste
  • 2 chicken breast
  • 1 cup water
  • 3 tbs olive oil
  • Rice:
  • 1 cup drained and rinsed Egyptian rice
  • ¼ cup vermicelli noodles
  • 3 tbs butter
  • 1 tbs vegetable oil
  • salt to taste
  • 2 cups water
  1. Finely chop onion and add to a heated pot with olive oil
  2. cook onion in olive oil for 4 minutes. Be careful not to burn or brown
  3. Add cubed chicken breast and cook until chicken is well done
  4. Smash garlic cloves and add to the chicken
  5. Add spinach and reduce the heat to medium low and place the lid on the pot
  6. Allow the spinach to cook down and release water. About ten minutes
  7. Add salt, water and lemon juice. Cook for another 10 minutes for flavors to combine
  8. Wash rice and drain 3 times
  9. Add butter and oil to a heated pot and cook vermicelli noodles until browned.
  10. Be careful not to burn the vermicelli noodles or the butter
  11. Add the drained rice and coat the rice in the browned butter until all the rice is coated
  12. cook for two minutes
  13. add 2 cups of water and place a lid on top.
  14. Steam cook until rice is tender.
