Shish Tawook is a marinade for chicken kabob and is mainly used in Arab countries, Turkey and Iran. The marinade keeps the chicken tender and juicy so when its ready to hit the coals it does not dry out. Instead your left with a deliciously spiced chicken kabob that is tender and exquisite. This is a great way to introduce new flavors into your home and spice up your usual chicken recipe.

This is a very easy and simple dinner to make. Its best to marinate your chicken for a few hours, but if your really hungry, 30 minutes will suffice. If shish tawook spice is readily available to purchase, great! If not, just combine the spices listed below and add to the chicken with olive oil, lemon and smashed garlic.

First things first. The Garlic paste. A creamy, white and fluffy cloud of garlic perfection. YES! This is the main staple of Levant cuisine. There are so many ways you can make this garlic paste. Ranging from mayonnaise, mashed potatoes, egg whites or vegetable oil.  For this recipe I used vegetable oil. If you are pressed for time and rather not make it  yourself then just smash 1 clove of garlic and add it to two tablespoons of mayonnaise. Easy!

I love to incorporate purple cabbage into this wrap for a delicious crunch. I adopted this idea from a well known German Sandwich Shop found here in the UAE called German Doner Kebab. I also added grilled onions, corn, a sprinkle of cilantro and green onion, and finished with a drizzle of spicy Sriracha sauce. Be creative and add whatever veggies you like!

This truly is so delightful and easy to make. Also, a great alternative to spice up your meal prepping for the week!

Serves: 5
  • Garlic Paste:
  • ½ cup garlic
  • ½ vegetable oil
  • juice from ½ lemon
  • 1 tsp salt
  • Chicken Marinade:
  • 500 grams or ½ pound boneless skinless chicken breast
  • 2tbs olive oil
  • juice from ½ a lemon
  • 2tbs shish tawook seasoning or if you do not have shish tawook spice then add:
  • 1 tsp paprika, ½ tsp thyme, 1 tsp oregano, ¼ tsp all spice, ½ tsp salt, ¼ tsp pepper, 3 cloves of smashed garlic
  • Wraps:
  • Whole meal flour wraps
  • slices of purple cabbage
  • ½ onion
  • Tomato
  • sprig of cilantro
  • ½ green onion
  • fresh corn (optional)
  • sriracha sauce
  1. Add garlic and salt in food processor and blend. Add vegetable oil and lemon juice slowly while blending the garlic. This is a slow process and will take up to 5 minutes. Allow the garlic paste to become white and fluffy.
  2. In a grill pan, add marinated chicken breast and cook 3-4 minutes on each side. Add slices of onion and grill simultaneously.
  3. Time to build your wrap! Spread garlic paste in the wrap, followed by slices of grilled chicken, onion, tomato, corn and herbs. Finish with a drizzle of sriracha sauce. Enjoy!
